- 1 lb large shrimp, peeled and deveined
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/3 cup olive oil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 tablespoon lime juice
Instructions
- In a bowl, combine parsley, cilantro, garlic, olive oil, oregano, red pepper flakes, salt, and pepper to make the chimichurri sauce.
- Reserve a few tablespoons of the sauce for later. Add the shrimp to the remaining chimichurri, toss to coat, and marinate for 15-20 minutes.
- Heat a skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side, until pink and cooked through.
- Drizzle the reserved chimichurri sauce over the cooked shrimp and finish with lime juice.
Notes
- For added heat, increase the red pepper flakes or add a dash of hot sauce.
- This chimichurri sauce works well with fish or grilled chicken, too!
- Serve with coconut rice, quinoa salad, or grilled veggies for a complete meal.
