  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) chicken broth
  • 1/4 cup (60g) grated Parmesan cheese
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Season tilapia fillets with salt, pepper, and paprika. Heat olive oil in a large skillet over medium heat. Sear tilapia for 3-4 minutes per side until golden and cooked through. Set aside.
  • In the same skillet, melt butter and sauté the chopped onion until softened. Add minced garlic and cook for another minute.
  • Add the roasted red peppers and chicken broth. Let simmer for 5 minutes.
  • Stir in the heavy cream and Parmesan cheese. Cook for a few minutes until the sauce thickens.
  • Return the tilapia to the skillet, spooning the sauce over the fillets. Cook for 2-3 more minutes.
