- 4 tilapia fillets (about 1.5 lbs/680g)
- 2 roasted red bell peppers, chopped
- 1/2 cup (120ml) heavy cream
- 1/4 cup (60ml) chicken broth
- 1/4 cup (60g) grated Parmesan cheese
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp paprika
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Season tilapia fillets with salt, pepper, and paprika. Heat olive oil in a large skillet over medium heat. Sear tilapia for 3-4 minutes per side until golden and cooked through. Set aside.
- In the same skillet, melt butter and sauté the chopped onion until softened. Add minced garlic and cook for another minute.
- Add the roasted red peppers and chicken broth. Let simmer for 5 minutes.
- Stir in the heavy cream and Parmesan cheese. Cook for a few minutes until the sauce thickens.
- Return the tilapia to the skillet, spooning the sauce over the fillets. Cook for 2-3 more minutes.
- Garnish with fresh basil or parsley and serve hot with your favorite sides.
