Ingredients

  • 2 lamb shanks
  • 4 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh rosemary, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Sear the lamb shanks until browned on all sides, about 3-4 minutes per side. Remove and set aside.
  • In the same pot, sauté the chopped onion and minced garlic for 3-4 minutes until softened and fragrant.
  • Pour in the beef broth, bring to a simmer, and return the lamb shanks to the pot. Cover and let simmer for 2 hours, or until the lamb is tender and falls off the bone.
  • While the lamb cooks, boil the cubed potatoes in salted water for 15-20 minutes, until fork-tender. Drain and mash the potatoes with butter and heavy cream until smooth. Season with salt and pepper to taste.
  • Serve the lamb shanks over the creamy mashed potatoes. Garnish with fresh rosemary and enjoy!
