Ingredients
Scale
- 8 oz spicy noodles (your choice)
- 8 oz kielbasa, sliced
- 1/2 lb shrimp, peeled and deveined
- 2 soft-boiled eggs, halved
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp chili paste (adjust for heat)
- 1 tbsp sesame oil
- 1/4 cup green onions, sliced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook the noodles: Prepare noodles according to package instructions, drain, and set aside.
- Sear the kielbasa: Heat 2 tbsp vegetable oil in a large pan over medium heat. Add sliced kielbasa and sear until browned, about 3-4 minutes. Remove from the pan and set aside.
- Cook the shrimp: In the same pan, add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
- Make the sauce: Add minced garlic, soy sauce, chili paste, and sesame oil to the pan. Stir until fragrant, about 30 seconds.
- Toss noodles in sauce: Add the cooked noodles to the pan, tossing until well coated in the sauce.
- Assemble: Divide noodles into bowls. Top with seared kielbasa, shrimp, and halved soft-boiled eggs.
- Garnish: Finish with green onions, cilantro, and a sprinkle of sesame seeds (optional). Serve immediately.
Notes
- Adjust the chili paste according to your spice preference.
- Swap out kielbasa for chicken, tofu, or mushrooms for a vegetarian version.
- For perfectly runny eggs, boil for 6-7 minutes. For firmer eggs, go for 8 minutes.
- This dish is best enjoyed fresh, but leftovers can be stored in the fridge for up to 2 days.
- Serve with spring rolls or a cucumber salad for a full meal.
