  • 2 soft-boiled eggs, halved

  • 1 tbsp soy sauce
  • 1 tbsp chili paste (adjust for heat)
  • 1 tbsp sesame oil
  • 1/4 cup green onions, sliced

Instructions

  • Cook the noodles: Prepare noodles according to package instructions, drain, and set aside.
  • Sear the kielbasa: Heat 2 tbsp vegetable oil in a large pan over medium heat. Add sliced kielbasa and sear until browned, about 3-4 minutes. Remove from the pan and set aside.
  • Cook the shrimp: In the same pan, add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
  • Make the sauce: Add minced garlic, soy sauce, chili paste, and sesame oil to the pan. Stir until fragrant, about 30 seconds.
  • Toss noodles in sauce: Add the cooked noodles to the pan, tossing until well coated in the sauce.
  • Assemble: Divide noodles into bowls. Top with seared kielbasa, shrimp, and halved soft-boiled eggs.
  • Garnish: Finish with green onions, cilantro, and a sprinkle of sesame seeds (optional). Serve immediately.
