For the Skewers:

  • 1 lb shrimp, peeled and deveined
  • 1 lb steak (sirloin or your favorite cut), cubed
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Chimichurri Sauce:

  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  • Prepare the Skewers: Thread the shrimp, steak cubes, red and yellow bell peppers, and red onion onto skewers. Brush with olive oil and season generously with salt and pepper.
  • Grill the Skewers: Preheat your grill to medium-high heat. Grill the skewers for 3-4 minutes per side, until the shrimp are pink and opaque, and the steak reaches your preferred doneness.
  • Make the Chimichurri: While the skewers are grilling, combine parsley, cilantro, minced garlic, olive oil, oregano, and red pepper flakes in a bowl. Stir well and add salt and pepper to taste.
  • Serve: Drizzle the fresh chimichurri sauce over the grilled skewers or serve it on the side as a dipping sauce.

Notes

  • Marinate the steak cubes in half of the chimichurri sauce for 1 hour for extra flavor.
