Ingredients

Scale
  • 4 skinless salmon fillets
  • ½ lb (225g) shrimp, peeled and deveined
  • ½ lb (225g) scallops
  • ½ cup cooked crab meat
  • 2 tbsp butter
  • 1 garlic clove, minced
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh dill or parsley, for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Sauté the seafood: In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Add shrimp, scallops, and crab. Cook until opaque, about 3-4 minutes. Season with salt and pepper.
  • Prepare topping: In a small bowl, mix breadcrumbs and Parmesan cheese. Sprinkle over the seafood mixture and toss gently to coat.
  • Wrap the salmon: Place each salmon fillet on a piece of parchment paper. Spoon the seafood mixture in the center, then fold the salmon around it.
  • Bake: Transfer to a baking sheet and bake for 20-25 minutes or until the salmon is cooked through.
  • Garnish and serve: Top with fresh dill or parsley and serve with lemon butter sauce or your favorite side.

Notes

  • For added greens, mix spinach or kale into the seafood mixture.
  • Use fresh seafood if possible for the best flavor.
  • Serve with roasted vegetables or mashed potatoes for a balanced meal.
  • Leftovers can be stored in the fridge for up to 2 days.
