Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it up as it cooks.
- Once browned, add diced onion and minced garlic. Sauté until the onion is translucent.
- Pour in the chicken broth and diced tomatoes. Stir in basil, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.
- Add cheese tortellini and cook for about 7-8 minutes until tender.
- Stir in fresh spinach and cook until wilted.
- Add heavy cream and stir until the soup is creamy and well combined.
