Description

This quick and easy Garlic Shrimp Scampi is a restaurant-quality dish you can make at home in just 25 minutes. Juicy shrimp are sautéed in garlic and olive oil, then tossed in a lemon-butter sauce with a touch of chicken broth. Serve it with linguine or your favorite pasta for a meal that’s as elegant as it is simple.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1/4 cup chicken broth
  • 1 lemon, juiced
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 8 oz linguine or your favorite pasta

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  • Sauté the Shrimp: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1 minute. Add shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from skillet and set aside.
  • Make the Sauce: In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping up browned bits from the pan. Stir in butter until melted.
  • Combine and Serve: Return shrimp to the skillet and toss in the sauce. Add the cooked pasta and toss everything together until well combined. Season with salt and pepper, garnish with parsley, and serve.

Notes

  • For extra flavor, add a sprinkle of freshly grated Parmesan cheese before serving.
  • Customize with gluten-free pasta or zoodles for a lighter option.
  • Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet with a splash of water or broth to loosen the sauce.
