  • 1 lb spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp olive oil (divided)
  • 6 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  • Cook Pasta: Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions. Drain and set aside.
  • Cook Shrimp: In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove from skillet and set aside.
  • Prepare Garlic Sauce: In the same skillet, add remaining 1 tbsp of olive oil. Add minced garlic and red pepper flakes, and cook until fragrant (about 1 minute). Stir in  chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes.
  • Combine Pasta and Shrimp: Add cooked pasta and shrimp to the skillet. Toss to coat the pasta and shrimp in the garlic sauce. Cook for an additional 2 minutes until everything is heated through.
  • Garnish and Serve: Sprinkle with fresh parsley and grated Parmesan cheese if desired. Serve immediately.

  • For a creamier version, add 1/4 cup of heavy cream to the garlic sauce.
