- 1 lb large shrimp, peeled and deveined
- 4 tbsp butter
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1 lemon, juiced
- 10 oz fresh spinach
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Shrimp:
In a large skillet, melt 2 tbsp butter over medium heat. Add garlic and red pepper flakes, sauté until fragrant (about 1 minute).
Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Squeeze lemon juice over the shrimp, season with salt and pepper, and remove from the skillet. Set aside. - Sauté the Spinach:
In the same skillet, add 1 tbsp olive oil and the remaining 2 tbsp butter. Once melted, add the spinach and cook for 2-3 minutes, stirring frequently until wilted. Season with salt and pepper. - Combine and Serve:
Return the shrimp to the skillet, tossing to combine with the spinach. Garnish with fresh parsley and serve immediately.
Notes
- If you like a little heat, the red pepper flakes will add a subtle kick, but they’re totally optional.
- You can substitute spinach with kale, Swiss chard, or arugula if you prefer.
