- 2 lbs beef stew meat, cut into chunks
- 2 tbsp olive oil

- 2 carrots, sliced
- 2 potatoes, cubed
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 cup water
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef in batches and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add mushrooms, carrots, and potatoes. Cook for 5 minutes.
- Stir in tomato paste, then add beef broth, water, bay leaf, and thyme.
- Return the beef to the pot. Bring to a boil, then reduce to a simmer.
- Cover and cook for 1.5 to 2 hours, or until the beef is tender.
- Season with salt and pepper. Garnish with fresh parsley before serving.
