Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp Cajun seasoning
  • 1/4 tsp smoked paprika
  • Salt and pepper, to taste
  • 12 small shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp Cajun seasoning (for shrimp)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Boil the eggs for 10 minutes. Cool them in an ice water bath and peel. Halve the eggs and remove the yolks.
  • In a bowl, mash the egg yolks with mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, salt, and pepper until smooth.
  • Spoon or pipe the yolk mixture into the egg white halves.
  • Toss the shrimp with olive oil and Cajun seasoning. Sauté in a skillet over medium heat for 2-3 minutes, until fully cooked.
  • Top each deviled egg with a shrimp and garnish with chopped parsley.
  • Serve chilled and enjoy!

  • For an extra kick, add a pinch of cayenne pepper to the yolk mixture.
