- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp Cajun seasoning
- 1/4 tsp smoked paprika
- Salt and pepper, to taste
- 12 small shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp Cajun seasoning (for shrimp)
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the eggs for 10 minutes. Cool them in an ice water bath and peel. Halve the eggs and remove the yolks.
- In a bowl, mash the egg yolks with mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture into the egg white halves.
- Toss the shrimp with olive oil and Cajun seasoning. Sauté in a skillet over medium heat for 2-3 minutes, until fully cooked.
- Top each deviled egg with a shrimp and garnish with chopped parsley.
- Serve chilled and enjoy!
