  • 4 cloves garlic, minced
  • 1/4 cup (60ml) soy sauce
  • 1/4 cup (60ml) chicken broth
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp ginger, minced
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Sesame seeds (for garnish)

Instructions

  • Prepare Chicken: Season chicken thighs with salt and pepper on both sides.
  • Brown the Chicken: Heat vegetable oil in a large skillet over medium heat. Add chicken thighs, skin-side down, and brown for 4-5 minutes on each side. Remove from skillet and set aside.
  • Sauté Aromatics: In the same skillet, add minced garlic and ginger. Sauté for 1 minute, until fragrant.
  • Make the Sauce: Add soy sauce, chicken broth, rice vinegar, brown sugar, and sesame oil. Stir and scrape up any brown bits from the skillet.
  • Braise the Chicken: Return chicken to the skillet, reduce heat to low, cover, and simmer for 30 minutes until tender.
  • Add Green Onions: In the last 5 minutes, stir in the green onions. For a thicker sauce, stir in a cornstarch slurry (1 tsp cornstarch mixed with water).
  • Serve: Garnish with sesame seeds and serve hot with steamed rice or noodles.
