For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

For the Cheesecake:

  • 16 oz cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • Zest of 1 lime
  • 2 tbsp lime juice

For the Blueberry Swirl:

  • 1 cup blueberries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp lime juice
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)

Instructions

  • Preheat your oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  • In a saucepan, cook the blueberries, sugar, and lime juice over medium heat until the blueberries break down. Stir in the cornstarch slurry and cook until thickened. Let cool.
  • In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in sour cream, vanilla, lime zest, and lime juice.
  • Pour the cheesecake filling over the crust. Spoon the blueberry mixture on top and swirl gently with a knife.
  • Bake for 50–60 minutes, or until the center is just set. Let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  • Serve chilled and garnish with fresh blueberries and lime zest.

Notes

  • For a gluten-free version, substitute gluten-free graham crackers for the crust.
